This honey with an amber color and fine crystallization is a mixture of the biodiversity of our mountains. There are: Sainfoin, Vesse, Tilleul, Framboisier, Marjoram, Bramble, Chestnut, Heather, Clover, Dandelion. It’s a honey with character.
 
Mountain honey is harvested at an altitude of 1200 meters. Above this altitude the name is "high mountain". The flowering of the small flowers that characterize mountain honey takes place for a short but intense period, from late June to mid July. The honey is harvested towards the end of July. The mountain honey selected by Honey Factory with a creamy and amber texture is typical of these honeys of character with a powerful fragrance with floral and fruity notes. Its traditional flavor makes it the perfect honey to accompany your breakfast.

Chèvre chaud with honey 

For 4 people 

Ingredients :

  • 4 thick slices of bread 
  • 1 tablespoon of mountain honey 
  • 4 small and fresh goat cheeses (chavignol or other) 
  • Fresh thyme springs 
  • 2 tablespoons of chopped almonds 
  • Salt and pepper 

 Preparation :

  • Preheat the oven to 180 ° 
  • Brush each slice of bread with honey.  
  • Place slices of goat cheese on each slice of bread.
  • Drizzle with honey and add salt and pepper to your likings.
  • Bake for about 10 minutes until cheese begins to melt.
  • Remove from the oven and garnish each slice with thyme.
  • Sprinkle the chopped almonds on top.
  • Serve hot as a started with a side of salad.
