Corsican maquis honey cake
This honey cake is a simple recipe to make with family. It contains no refined sugar, just honey. Honey is interesting in cakes because it helps retain moisture and thus prevents them from drying out too quickly. We suggest using our Corsican maquis honey AOP to give the cake a bit of character, without being too sweet!

- 200 g of liquid honey
- 200 g of flour
- 15 cl of olive oil
- 4 eggs

- 1 teaspoon of cinnamon

- Preheat the oven to 180°C (convection heat)
- Mix together the honey, eggs, and oil
- Gradually add the flour and baking soda
- Pour the batter into a buttered or parchment-lined mold
