Heather Bell is a species of the family Ericaceae. It is the most common species of heathers in Europe. This plant is cousin to callune heather and grows in abundance in the moors in the central massif and the Cévennes.
Its small, pink, bell shaped flowers bloom between the months of June and July. Thus, Heather Bell honey is generally collected in August. In terms of flavors this honey conveys powerful woody flavors without carrying the bitterness of the heather. Its color is dark when harvested. Over time, its texture takes on a coppery tone with fine to significant crystallization.
