Nothing more comforting than a delicious butternut squash soup on those cold winter days.
Butternut is a variety of squash shaped like a large pear. You will find some from December to mid-March on the stalls (always favor seasonal fruits and vegetables!). Its taste is very fine and will remind you of butter. To add even more sweetness, we will add to our soup a spoon of acacia honey and a pinch of cinnamon.
Here is our honey recipe for 4 people. It is very easy to prepare.
Instruments:
- A saucepan or pan with wide edges
- A blender or hand blender
Ingredients:
- 1 butternut squash
- 1 yellow onion
- 1 teaspoon of acacia honey
- 1 cube of organic vegetable stock
- 1 pinch of cinnamon
- 1 tablespoon of crème fraîche (optional for the most greedy)
- A few hazelnuts for crushing (optional)
- Water
Preparation:
- Cut your butternut into cubes.
- Roughly cut the onion into strips.
- Brown the onion and the butternut in your pan with a drizzle of olive oil over medium heat for a good ten minutes.
- Crumble the vegetable broth, add the pinch of cinnamon and the spoon of acacia honey. Mix.
- Pour boiling water up to the cubes of butternut.
- Cover and simmer the preparation over normal heat for 30 minutes (until the butternut is soft).
- Mix the soup until you get a smooth texture.
- Season to your liking and add the hazelnuts.
