Oak Honey

When we say "oak honey", we are wrong. Rather, it should say "oak honeydew".

Indeed, the bees do not collect the nectar as they can in the flowers, but rather the honeydew, viscous liquid deposited on the trees by various insects which feed on the sap of the trees.

The bees will then turn it into honey.

Oak honeydew is an unusual and little known honey. This nectar has a distinctive taste with character, fruity and woody notes. Its color is dark, almost black and its liquid texture with a syrupy side. Its smell may remind you of the woods.
