The making of honey vinegar

The slow fermentation of our vinegar brings out the quintessence of the aromas. We start with water and honey, the first fermentation transforms the sugars into alcohol. After a first decantation and filtration, a new fermentation will slowly begin which will transform the alcohol into acetic acid.

This new solution decanted once again and aged in an oak barrel will give way to a vinegar, clear, perfumed with a very subtle honeyed note, without the formidable acidity of classic vinegar.


A sweet vinegar!

Our vinegar will be particularly appreciated for seasoning a salad, accompanying a vinaigrette, deglazing a cooked dish or simply replacing olive oil to taste an avocado or a tomato.

Miel Factory suggests the following recipe, Thai rice with honey vinegar:
- Cook some Thai rice.
- Place a few parmesan shavings cut into very thin strips on top of the rice.
- Pour a few drops of honey vinegar on the chips and rice.
