This organic lavender honey is harvested by Mathilde, our partner beekeeper. The hives are positioned on a 10-hectare expanse of fine lavender; the lavender field benefits from the sun and the clay-limestone soils of Quercy.
In June, the lavender fields begin to bloom. A few days before full bloom, Mathilde practices the transhumance of her hives at night, placing them at the edge of the lavender field. The next day, at the first rays of sun, after a scouting flight, the bees quickly get to work to collect the precious nectar and pollen of fine lavender (unlike sterile lavandin which produces no pollen but only nectar).
