It is one of the first honey harvests in our regions after almond honey. We often find in spring honey rapeseed, dandelion, hawthorn and different fruit trees. Here are the characteristics of this popular honey.
Rapeseed
Rapeseed fields cover our plains in spring. It is one of the main crops in our countryside in central, western and southwestern France. Rapeseed flowers from April to mid May, its flowering is intense and abundant. The honey harvest takes place in May. It has a soft texture and fine granulation with intense crystallization. It is rapeseed which promotes the crystallization of spring honey. Its taste is sweet. The rapeseed flower is rich in trace elements and more particularly in calcium, it facilitates intestinal transit.
Hawthorn
Hawthorn occurs mainly in hedges in the north and west of France. It blooms from April to May and gives small white to pink flowers. The honey has a rather light color and a suave, slightly fruity taste. The hawthorn flower is recommended to fight against insomnia and palpitations.
Dandelion
The dandelion is present in all our regions but mainly in the central massif, the Pyrenees and the Hautes Alpes. It flowers during the months of April and May. The dandelion gives birth to a small, bright yellow flower in the same hues as rapeseed. A slight ammonia odor is present and makes it special. In the mouth it remains discreet with a slightly "rancid" note which makes it specific and which is found in the spring honeys where it is present. The dandelion flower is an excellent diuretic.
The fruit tree
Cherry and apple trees that have a spring bloom are sometimes present in spring honey depending on the location of the harvest. The cherry tree is mainly found in the Rhône valley and in Provence. The apple tree is more present in the west of France and more particularly in the north of Italy. The nectar of these flowers brings a little fruity and original touch to spring honey.
Once again the honey works a real magic of the senses. Depending on the terroir and the flowers gathered, the same appellation will have different smells, colors and tastes.
